Any way to fix this assembly without starting over?

I want the base to be flat on the bottom so it will look right when I do the drawing.

Starting over is the right way.
But, you may not need to completely start over. Assuming the parts are mated to each other, and not the assembly reference planes. You should be able to float the first (fixed) component, then manually rotate/mate it into the new desired orientation.

Alternatively, you could leave the assembly as it is, and just use different views in the drawing. Don't use the "insert standard three views" button. Manually put in the view you want to be the front view, then use the projected view button to create the top/right/iso views you need.

If you want to do it the wrong way, the views of the assembly can be changes so your front view, become the top view (or any other view).
It is a bad way to "fix" the problem, because your Front plane is going to still be called the Front plane, but it will act/look like the Top plane. Also, it is possible to reset the assembly views later, and easily destroy the drawing.
