Help. I need help on how to design a manual bottling labeller. Does anyone have any models that I could borrow or could point me in the direction on how to complete one with gears, pulleys, handles etc on solidworks

Google may not show you specifically how to design such a device, but there are dozens of results for "Manual Bottle Labeler".
The design does not look very complex, but obviously it must be designed with the size/type of bottles you plan to use.
If you posted more details, with specific questions related to the design or process, I'm sure you'd get some assistance.
